Time-Saving Tips

Plan three menus for the week instead of seven — But make a little extra. This makes meal preparation and shopping easier.
Use leftovers creatively — If you’ve served vegetarian chili over rice, try the same chili rolled in a tortilla with shredded lettuce, chopped tomato and melted low-fat cheese. Ground turkey meatballs served with spaghetti can instantly become meatball sandwiches the next night, accompanied by a large tossed salad and whole-grain rolls.

Try grilling foil packets — Combine boneless chicken breasts with a little red or green pepper, raw broccoli, onion, garlic powder, a splash of white wine and a teaspoon of olive oil in a foil packet. Toss on the grill for 15 minutes or until the juices of the chicken run clear. To further speed cooking, pop the chicken in the microwave for 2 or 3 minutes before grilling. No messy cleanup — and tastes great, too. Serve with quick-cooking brown rice and fresh fruit. Do the same with any fish.

Make-your-own nights — Instead of focusing on putting the meal together yourself, invite the children to help out. Provide each child with an individual pan pizza shell.

Set out a potpourri of quick-serve toppings: shredded low-fat mozzarella cheese, pizza sauce, steamed broccoli and mushrooms. If time is tight, microwave the pizza. Tacos work with similar success.

Pasta to the rescue — Take advantage of the quick-cooking varieties such as angel hair or capellini, which cook in 4 to 6 minutes, or buy refrigerated pasta. Add heated cocktail shrimp or chicken strips and your favorite red pasta sauce. Presto — a quick and tasty dinner that scores high nutritionally, especially when accompanied by a tossed salad, bread and fresh fruit.
